MIRSAD SPAHOVIC AND THEA CARLSON
Carlson is the Program Coordinator of Angelic Organics Learning Center’s Chicago Urban Initiative. Mirsad is a master beekeeper who demonstrates his craft in workshops and classes at the learning center. This workshop is focused on keeping bees through harvest and winter. It is a warm sunny day, so the bees are calm. Even so, protective clothing is always worn. It is light colored to provide the greatest contrast from the bees’ natural predators, such as bears, which are generally darker and furry. The attendees gather around as Mirsad demonstrates methods of removing honey from a hive. When the honey has been extracted, pieces of the comb are passed out among the group. Each person gets to taste the sweet, minty honey as the delicate comb collapses in their mouth.
The not-for-profit partner of Angelic Organics Farm, a CSA (community supported agriculture) in Rockford, Illinois, Angelic Organics Learning Center functions both on the farm and at locations in the city, including the learning center and urban farmstead in the Woodlawn neighborhood on Chicago’s south side.
